HOMEMADE KETCHUP SAUCE
Ingredients:
1 kg. of tomatoes
1 spoon of powdered mustard, 1 pinch of salt
1 pinch of pepper, 1 spoon of Biological apple vinegar
2 spoons of honey
How to prepare:
Boil the tomatoes and peel them. Whip them and then boil again for some minutes
together with the powdered mustard, the salt, the pepper and the apple vinegar. At
the end add the honey and stir. The sauce is ready to use or can be preserved in
glass pots hermetically closed.

TARTARE SAUCE
Ingredients:
200 gr. of mayonese, 2 spoons of Biological apple vinegar
1 hard boiled egg, 1 onion, 1 spoon of minced chives
1 spoon of parsley, 1 spoon of capers, 1 spoon of sweet pickles
How to prepare:
Chop up the egg, the onion, the onion herb, the parsley, the cappers and the
pickles, pour into the mayonese and delicately stir with the apple vinegar.
Suggestions:
Use this sauce for the trimming of open canapé or vegetables.

SPICY PICKLES
Ingredients:
3 parts of Apple Vinegar and 1 part of water
Pepper, ginger, bay leaves, cinnamon, hot chilli pepper, cloves
Mustard seeds, small onions, vegetable at one’s own pleasure
How to prepare:
Put all the ingredients in a pan with a pinch of salt, bring to the boiling-point and
pour still hot into glasses pots. Close with hermetical caps. Eat after some days.
